Tasting Note:
Medium red colour. Ripe cherry and strawberry fruit aromas with some lifted pot pourri in a very pretty, highly aromatic cool climate Pinot nose. The palate has ripe red fruit flavours, a velvety texture and a subtle charcuterie complexity with a bright, vibrant finish.
Winemaking:
A selection of the best parcels of 3 clones of Pinot Noir were made in the Warburton Wines “Schuberts” vineyard, clones 777 (50%), 115 (35%) & MV6 (15%).
After hand harvesting 35% of the bunches were loaded in to the fermenter, then the remaining bunches were gently de-stemmed in on top.
After 3 days of cold maceration the fermentation started, and the cap was gently plunged 3 times a day to extract colour and tannin from the skins.
Once dry the wine was run off to 300 litre French oak barrels (20% new, 80% old seasoned) where it underwent malolactic fermentation to soften the acidity.
Nine months maturation followed in the same barrels, after which the barrels were blended and the wine bottled in January 2025.
