Tasting Note:
Pale straw colour. The nose is fresh and bright with subtle floral, red apple and lemon rind aromas. The palate has crunchy red apple flavours, a creamy texture and a long, refreshingly dry finish.
Winemaking:
A blend of 52% Pinot Noir, 48% Chardonnay.
Pinot Noir and Chardonnay were hand harvested from Warburton Wines “Schuberts” vineyard in the cool of the early morning. Each variety was gently whole bunch pressed in an airbag press and fermented separately in a combination of stainless steel and old French oak barrels. After primary fermentation with a selected sparkling wine yeast, the wine was left on its lees to undergo a secondary malo-lactic fermentation in tank and barrel to soften the acidity and add texture to the wine. After blending the wines were transferred to pressure tanks for a second yeast fermentation for 4 weeks (Charmat method) to produce the bubbles for the Sparkling, after which the wine was bottled in December 2024.
